Cereal & Oat Crusted French Toast

1 C. Extra Fluffy Pancake Mix
3/4 C. Water
3 Tbs. Maple Syrup
2 C. Corn Flake Cereal
2 C. Oatmeal
6 Slices Thick Cut Texas Toast (cut in half diagonally)

In a food processor add the corn flakes and oatmeal, combine just until the cereal has broken down a little (don’t make it too small), place the cereal mixture into a pie plate and set aside. In another pie plate make the pancake batter and add in the maple syrup then mix well. Heat a deep fryer to 320 degrees, when ready coat one piece of toast at a time in the batter then cover in the cereal mixture, then slowly place in deep fryer. Make sure you do not crowd the fryer, better to cook two halves at a time. Cook each side for 1 minute or just until brown and crispy. When all of the toast has been cooked, plate it, and sprinkle with powder sugar.
